Dhokla is made up of different of dal like chana dal , udad dal, toor dal and rice.. made from fermented batter.. It is also baked in steamer.Dhokla is little harder than khaman.
Ingredients and spices that need to be Get to make Dhokla Basket:
- For dhokla batter (yellow and white)
- 3 cup rice (basmati)
- 3/4 cup udad daal
- 1/4 cup toor daal
- 1/4 cup chana daal
- 1/4 cup curd
- as per taste Salt
- 1/2 spoon fenugreek seed
- For Idada and sandwich dhokla
- 3 cup rice (basmati)
- 1 cup udad daal
- 2-3 spoon curd
- 1/2 spoon fenugreek seeds
- 1/2 teaspoon Salt and fenugreek
- Tempering
- 1 spoon mustard seeds
- 1/2 tea spoon hing
- 4-5 green chilli (cut)
- 4-5 spoon oil
- Masala ingredients for batter
- 1/2 tea spoon turmeric
- 2 tea spoon sugar
- 1 spoon red chilli powder
- 2 spoon ginger garlic chilli paste
- leaves Coriander
- For tempering (sandwich dhokla)
- 6-8 curry leaves
- 1/4 tea spoon hing (Asafoetida)
- 1/2 tbsp mustard seeds
- 1/2 tsp Sesame seeds
- Other ingredients
- as required Fruit salt / Eno
- as required Green chutney
Steps to make to make Dhokla Basket
- For Dhokla soak. all ingredients saperately..over night. Soak fenugreek also with dal.
- Grind all ingredients saperately.. add salt and curd while grinding.. grind roughly and make a paste..now mix all paste to gather..



- Batter should not be so thick. Should be like idli batter

- Add 1 spoon chana daal in a batter.
Cover this mixture with lead and put aside at worm place for again 6-7 hours(depends on weather conditions). - Once a batter is fermented. Add turmeric powder, red chilli powder.,sugar, salt, ginger garlic chilli paste and coriander leaves..
- Mix all ingredients together and at the time of cooking, add soda or fruit salt or any raising agent.
- Now grease the plates and pour the mixture into plates.
- Add seasoning like redchilly / methiyo masalo.
- Let them steam into steamer for at least 10 minutes. Your khatta dhokla is ready to serve.
- For making white dhokla don't add turmeric and red chilli powder.. remaining process is same.
- For Idada.. soak all ingredients saperately overnight.soak fenugreek also with dal.



- Grind all ingredients saperately.. add salt and curd while grinding.. grind roughly and make a paste..now mix all paste to gather..
- No extra masala needed for idada.. it is like idli.. add salt.. add fruit salt at the time of cooking.
- Seasoning with black pepper..
- Steamed it for 10 mints. Now after 2-3 mints cut it into small pieces



- For sandwich dhokla.. take a batter of idada.. add fruit salt.. pour little batter into grease pan.. and let it cooked for 5 mints in a steamer..
- Now after 5 mints remove it from steamer.. make a thick layer of green chutney and again pour idada batter nicely.. seasoning with red chilli powder and blackpaper
- Cook for 7 -8 mints.
- Pour the tempering.. and your sandwich dhokla is ready..



- Now for fusion dhokla.. take khaman batter and white dhokla batter..pic is of khaman batter


- First pour idada batter in a greased pan.. cook it for 5 mints.. now removed it from steamer.. pore khaman batter and seasoning with black pepper.. cook it for 7 mints..
- After it cooked.. pour tempering (as per khaman tempering/ sandwich dhokla tempering).. as per your taste.. if you like sweet taste pour khaman tempering..



- Dhokla basket is ready





- You can shallow fry the dhokla next day.. heat a pan and put some oil, mustard seeds, curry leaves, little chilli powder, sesame seeds, and sugar.. garnish with coriander leaves.. it taste very nice..
