  1. For Rice :
  2. 2 cups Basmati rice
  3. 4 cups Water
  4. 4 nos Cloves
  5. 4 nos Cardamom pods
  6. 1 inch Cinnamon stick
  7. 1 Bay leaves
  8. 2 tsp Lemon Juice
  9. to taste Salt
  10. For Marinating Chicken:
  11. 1/2 kg Chicken
  12. 1/4 tsp Turmeric powder
  13. 1 tsp Red Chilli powder
  14. 1/2 cup yoghurt
  15. 1/2 tsp Biryani masala
  16. to taste Salt
  17. For Chicken Masala :
  18. 4 medium Onion (thinly sliced)
  19. 2 medium Tomatoes(chopped)
  20. 15 nos Green Chillies (chopped)
  21. 1 inch Ginger
  22. 8-10 Garlic cloves
  23. 1 tbsp Biryani masala
  24. 1/2 tsp Red chilli powder
  25. 2 tbsp Coriander powder
  26. 1/4 tsp Turmeric powder
  27. 1/4 cup Mint leaves(chopped)
  28. 1/2 cup Coriander leaves (chopped)
  29. 2 tbsp Oil /Ghee
  30. For Garnishing :
  31. Handful Cashew nuts
  32. Handful Raisins
  33. 3-5 tbsp Ghee
  34. 1/2 cup Onion (thinly sliced)
  35. Handful Coriander leaves
  36. Handful Mint leaves

Instructions to make to make Chicken Biryani

  1. Cooking the Chicken Masala:
    Clean with pinch of turmeric and cut the chicken into medium-sized pieces and drain the water well.
    Grind ginger, garlic, green chillies into a thick paste and set it aside.
    Marinate the chicken with all above-mentioned ingredients “For Marinating Chicken” for 1 hrs and shallow fry it.
    Heat oil/ghee in a pan, add thinly sliced onion saute, add the ginger, garlic, green chilli paste,saute until brown colour.
  2. Add chopped tomatoes and saute for few seconds.
    Add the biryani masala,turmeric powder,red chilli powder,coriander powder,combine well and saute untill the raw smell goes. Add the chopped coriander & mint leaves and mix well. Then add the shallowed fried chicken and cover & cook on medium flame for about 10 mins add water if needed and adjust salt.
  3. Cooking the Rice: Soak the rice for 30 mins and drain the water completely.
    Boil the required water,with half of the whole masala (cardamom, cloves & cinnamon) and add little oil and salt.
    Heat ghee in a pan & add whole masala. Add the cleaned & drained rice, when the rice starts cracking add it to boiled water and cook uncovered the rice for 8-10 mins.
    When rice done,drain the excess water immediately spread the rice on a tray and sprinkle the lemon juice. Let it cool.
  4. Layering the Biryani:
    Preheat the oven to 180 degree 10 minutes before baking the biryani. Apply some ghee to a baking dish. Put one layer of rice in the dish. Sprinkle some chopped coriander & mint leaves, fried onion, cashew and raisins (if using) and drizzle some ghee. On top of that spread some chicken masala. Repeat the process until the masala and rice is finished. The top layer should be of rice.Bake in the preheated oven for 20-25 mins.
  5. Garnishing:
    Heat ghee/oil in a pan and fry the cashews & raisins. Remove them from the pan & in the remaining ghee/oil fry the onions till it becomes golden brown. Drain the excess ghee in a paper towel & keep it aside.
    Garnish the baked biryani with fried cashew, raisins, onions, chopped mint and coriander leaves. Serve hot with pickle, raita & pappad.
