  1. 1 kg Basmati Rice
  2. 1 kg Mutton Bone-in
  3. 8-10 Garlic cloves chopped
  4. 2 tbsp Ginger mince
  5. 1 tbsp Coriander Seeds
  6. 1 tsp Turmeric powder
  7. 1 tsp Coriander powder
  8. 2 tbsp Salt or to taste
  9. 4-5 Onions sliced
  10. 1/2 cup Oil or Ghee
  11. 2 tbsp Red Chilli powder
  12. 5-6 Cloves
  13. 4 Cardamoms
  14. 2 Cinnamon sticks small
  15. 1 tsp Cumin Seeds
  16. 1 tsp Garam Masala
  17. 1-2 tbsp Lemon juice
  18. 3 Tomatoes finely chopped
  19. 1 1/2 cups Curd (well beaten)
  20. 1 small bunch Coriander Leaves chopped
  21. 1/2 (1 bunch) Mint Leaves chopped
  22. 4-5 slit Green Chillies

Instructions to make to make Aloo Gosht Pulao Biryani

  1. Add 1 sliced onion, coriander seeds and chopped garlic to a muslin cloth and tie it up. Add this muslin cloth to a cooking pot with mutton, ginger mince and 6-8 glasses of water.
  2. Cook until almost 4 glasses of stock remains in the pot. Meanwhile soak rice for 20 minutes. Alternatively it can be pressure cooked also. But slow cooking gives it a distinct flavour and texture.
  3. Now take out muslin cloth and separate mutton and the stock. Heat ghee and fry the remaining sliced onions. Fry until they turn pinkish in colour. Now add whole spices like bay leaves, cumin seeds, cardamom, cinnamon and cloves.
  4. Next add green chillies, red chilli powder, turmeric powder, coriander powder chopped tomatoes and beaten curd. Saute until done. Now add mutton bone-in and mix well. Add deep fried potato cubes of medium size. Adjust salt and garam masala. Sprinkle chopped coriander and mint. Set aside this cooked mutton. Squeeze some lemon juice if desired.
  5. Bring stock to a rolling boil and then add soaked rice to it. Cook al dente. Add salt to the stock as per taste. Now comes the layering part, arrange the mutton at the bottom followed by rice and finally the saffron on top. Cover and let it be on the gas on a low heat until ready to serve. Mix well and it's all ready to be served to your loved ones and friends.
